Gluten free and Paleo friendly Chocolate Chip Cookies

Gluten free, Paleo friendly and Delicious! I found the original recipe on Pinterest.com. If you haven't heard about Pinterest, definately check it out.

Preheat oven to 325 degrees.  Line a baking sheet with parchment paper.

Mix together

       2 eggs

       2 tsp. good quality vanilla

       1/2 cup melted coconut oil

       1/2 cup honey

Mix in another bowl

       3 1/4 cup almond meal - Trader Joe's makes good one

       1 tsp. salt

       1 tsp. baking soda

       1 1/2 cup vegan chocolate chips - found these at Whole Foods

Mix dry ingredients into wet ingredients.  Refridgerate for about 1 hour it will help the cookies hold their shape.

Drop by tablespoonfuls onto baking sheet.  I use a 1 tablespoon cookie scooper.

Bake for 10-12 minutes or until golden brown. Leave on baking sheet for about 5 minutes to firm up and then transfer cookies to a cooling rack.

Makes about 3 dozen cookies.
