Heavenly Halloween Pumpkin Treat

This fall pumpkin treat with buttery cream cheese frosting is sure to please.

I couldn’t let Halloween come and go and not squeeze in a pumpkin recipe. This week, I baked a sweet pumpkin recipe that has been passed down from generation to generation in my family. You’re going to love these little gems!

Have the recipe handy because if you make them and share them, someone is sure to ask you for the recipe!

These tasty treats are fantastic for a crowd. They make four dozen bars. What else is to love? Not only do the taste great and you can serve them as a snack or even for a fast before school/work breakfast.

So, if you’re heading to a Halloween party, bring them! Why not treat your co-workers to a homemade fall treat?  You can add nuts on top of the buttery vanilla cream cheese frosting and you can add raisins to the batter, if you’d like, too. 

Pumpkin Bars:

Ingredients:

4 eggs

2 cups sugar

1 cup vegetable oil

1 can (16 oz) pumpkin

2 cups flour

2 teaspoons baking powder

2 teaspoons ground cinnamon

1 teaspoon baking soda

¾ teaspoon salt

Heat oven to 350 degrees. Grease jelly roll pan 15 ½ x 10 1/3 x 1 inch. Beat eggs, sugar, oil and pumpkin. Stir in flour, baking powder, cinnamon, baking soda, salt. Pour batter into pan. Bake until light brown, 25 to 30 minutes.  Cool/ frost with Cream Cheese Frosting (see below for ingredients). Cut into bars about 2 x 1 1.2 inches. Refrigerate any remaining bars (49 cookies)

Cream Cheese Frosting:

Mix 1 package (3 oz) cream cheese, softened, ¼ cup pluse2 tablespoons butter, softened and 1 teaspoon vanilla. Gradually beat in 2 cups powered sugar until smooth and of spreading consistency.
