Giuseppe Musto begins each morning at 6:30 a.m. by mixing a secret combination of ingredients for homemade mozzarella cheese, he stretches it and works it until perfect.
He then follows a specific recipe for soon-to-be-famous ricotta cheese that fills fresh cannoli and pies.
“That’s the same recipe my grandmother used to make,” he said motioning to a refrigerator full of them.
newest business owner – after a four-year hiatus – finally has the place he always wanted, his wife Marcella told Dedham Patch in a recent interview.
“He wanted an Italian store. He wanted the cold cuts,” Marcella said. “This is what he wanted, and he got it.”
Giuseppe added, “It’s always been my dream.”
opened its imported deli case Thursday to hungry Square shoppers and workers looking for a made-to-order Italian sub or fresh eggplant.
“We didn’t expect that much the first day,” Giuseppe recalled. “We were very surprised, but it’s a good thing.”
But the menu will change over time, said the 32-year-old Giuseppe. When he makes his yearly visit to his home outside of Naples, Italy, he promises to bring back new recipes.
The Italian shop occupies 26 Bryant St. and faces many town employees to invade the shop. Marcella said while the store has eight off-street parking spots next to the building, they would rely heavily on foot traffic that pours through Dedham Square.
The Mustos, who live in Dedham, formerly owned Giuseppe’s on High Street, which the restaurant’s namesake says he learned a lot from the sit-down business.
“It’s very different. Big time. That business was good for me,” Giuseppe said. “[I learned] how to save some money. […] I thought it would be a little easier [this time], but it’s been a challenge.”
With Italian chocolate Easter gifts lining the store, imported olive oil resting on the shelf and imported prosciutto slicing, the Mustos have nestled back in the Square.
“He’s been here every day for months,” Marcella said. “I can’t even count [the hours].”
