Random store/restaurant hours

I moved to Dedham last year and so far I am very happy. My favorite is high street,with several restaurants,cafes and stores. my question is, why is 90% of the stores are closed 5 days a week? For example, blue bunny book store I think I saw them open during the Christmas time and that was it, i havent seen courtside cafe open anyday, Dedham country store open on sunday for several hours, wardles pharmacy is never open. i love deli after dark and they have random hours too. there were many times that me and my husband went for dinner and saw them closed. Anyone knows why these stores have random hours?
