Black Bottom Cupcakes Perfect Ending to Super Bowl Bash

Make all of your favorite snack foods, dips and drinks and end the party on a high note with these petite treats!

You think Brady has pressure on him this weekend? Ha! He hasn’t been stressing over the Super Bowl menu! And not just any Super Bowl menu, but a menu where the Pats are playing in the Super Bowl. 

I over-thought this one. Had I just asked everyone what they wanted, I’d have had my answers. I would hear: “Pork BBQ Sandwiches” (which, by the way were amazing but more importantly, we ate them and the Pats won, so of course we have to serve them again. We’re a little superstitious over here!), “Kielbasa” and “End Zone Nachos.” I guess all I really had to do was go back to my good old reliable recipes, grab a few of the standbys that everyone devours.

I also wanted to make a fun, sweet dessert that everyone would love, too.  Who doesn’t love a good cupcake? Like watching football, these cupcakes have been a tradition in our family ever since I can remember.

Yes, it’s easy to grab a cake mix and some homemade frosting, but you can whip up a batch of these special homemade cupcakes (they’re my all time favorite cupcake) in just as quick of a time. This combination of a creamy cheesecake-like filling and chocolaty cake will have your football fans reaching for more!

MAMIE'S BLACK BOTTOM CUPCAKES

INGREDIENTS:

8 oz. cream cheese (softened, brought to room temperature)

1 large egg

1/3 cup sugar

1/8 teaspoon salt

6 oz. semi-sweet chocolate chips

1 1/2 cup flour

1 cup sugar

1/4 cup unsweetened cocoa

1 teaspoon baking soda

1/2 teaspoon salt

1 cup water

1 tablespoon vinegar

1/3 cup vegetable oil

1 teaspoon vanilla extract

DIRECTIONS:

Preheat oven to 350 degrees. In a medium bowl combine the ingredients for the cupcake filling: softened cream cheese, egg, sugar & salt. Beat well and stir in chocolate chips. Set aside. In a separate medium bowl sift dry ingredients for chocolate cake: flour, sugar, unsweetened cocoa, baking soda & salt. Mix in: water, vinegar, vegetable oil & vanilla extract.

Fill 18-20 cupcake liners 1/3 full of chocolate cake mixture. Top with a heaping tablespoon of cream cheese mixture. Bake for 25 to 30 minutes. Cool. Refrigerate.
